Sugar Free Dairy Free Oatmeal Raisin Cookies

Ingredients
- 1 Cup Coconut Oil
- 1 Cup Splenda or sugar
- 2 Eggs
- 2 Tbsp Vanilla
- 1 1/2 Cups Flour
- 1 Tsp Baking Soda
- 1 Tsp Cinnamon
- 1/2 Tsp All Spice
- 1 Cup Raisins
- 2 Cups Quick Oats
- 1 Cup Apple Sauce unsweetened
- 1/2 Cup Water
- 1 Tsp Nutmeg
Instructions
- Preheat oven to 375 degrees.
- In a large mixing bowl mix everything other than flour and oats together. After it is well mixed you can add in flour and oats and mix just until blended.
- On a nonstick cookie sheet that is ungreased place spoonfuls of batter. Baking mats also work great. I used a 1/8 measuring scoop as my spoon to keep the cookies about the same size. You can shape slightly with fingers if you want your cookies to be more round.
- Place on center of the oven for 12-15 minutes until golden brown.
- Remove from oven when done and place on a cooling rack. Then store in an airtight container.
