BACON & SWISS ZUCCHINI BAKE – LOW CARB, LOW FAT, THM FP

Ingredients
  • 2 cups shredded zucchini
  • 8 egg whites
  • 1/2 cup 1% cottage cheese
  • 3 wedges light swiss cheese
  • 1/4 cup unsweetened almond milk or reduced carb milk such as Fairlife Milk
  • 3 tbsp bacon crumbles
  • 1/2 tsp salt
Instructions
  1. Preheat oven to 350.
  2. Spray an 8 x 8 casserole dish with cooking spray. Put the shredded zucchini into the dish.
  3. Combine the other ingredients in a blender and blend until smooth. Pour over the top.
  4. Bake until golden brown and set. About 30 minutes.
