DAIRY-FREE COCONUT HORCHATA RECIPE

Ingredients
- 1 cup uncooked long grain white rice rinsed until water is clear
- 4 cups water
- 1/2 cup coconut milk
- ½ tablespoon vanilla extract
- ½ tablespoon cinnamon or 1 cinnamon stick
- 1/3 cup to 2/3 granulated sugar
Instructions
- In a blender add cinnamon stick, rice and water. Let sit for 3-12 hours. Pulse for 10 seconds. Strain through strainer or nut bag.
- Stir in vanilla, milk and sugar. Serve over ice with a pinch of cinnamon or a stick for garnish.
