HOW TO MAKE DAIRY FREE CREAM OF MUSHROOM SOUP

Gluten-free dairy free cream of mushroom soup recipe


INGREDIENTS

  • 2 tablespoons butter flavored coconut oil, or ghee
  • 1 cup mushrooms, diced
  • ½ onion, diced
  • 2 tablespoon garlic, minced
  • ¾ cups chicken broth
  • 1 cup coconut cream
  • 2 tablespoons arrowroot powder, or glucomannan as needed
  • Salt and pepper to taste

INSTRUCTIONS

  1. In a large saucepan or skillet, melt ghee.
  2. Add in mushrooms and onions, saute for 5-7 minutes, until onions are translucent.
  3. Stir in garlic.
  4. Add in chicken broth and bring to a boil.
  5. While whisking, stir in arrowroot powder.
  6. Continue to cook until mixture reduces by about half.
  7. In a blender, blend ⅔ of the mushroom mixture until smooth.
  8. Place mixture back into pan, continually whisking in coconut cream until smooth.
  9. Bring cream of mushroom soup back to temperature and serve or use in a recipe as needed.
