Ingredients

Dough

  • 1 1/2 cups Shredded Mozzarella (160 g)
  • 2 oz Cream Cheese (56 g)
  • 1 Egg
  • 3/4 cup Almond Flour (85 g) (or 3.5 - 4 tbsp (30 g) Coconut Flour)
  • 1/2 tsp Stevia Powder
  • 1/2 tsp Alminum-Free Baking Powder
  • 1/2 tsp Vanilla Extract
  • 1 tsp Xanthan Gum (Optional but helps the texture)

Chocolate Cream Cheese Filling

  • 6 oz Cream Cheese (170 g)
  • 4 tbsp Heavy Cream
  • 6 tbsp Cocoa Powder
  • 2 tsp Liquid Stevia
  • 2 tsp Vanilla Extract
  • 1 tsp Cocoa Powder (Optional: To dust the cream horns)

Instructions

Dough

  1. In a large saucepan, melt the mozzarella cheese and cream cheese over low heat until it can be stirred together and remove from the heat. (Or microwave 1 - 1.5 minutes.)
  2. Stir until well combined.
  3. Add an egg and stir.
  4. Add the rest of the dough ingredients and mix well. (I use this stevia powder and this xanthan gum.)
  5. Wet your hand and knead the dough until uniform. * Reheat the dough if it gets crumbly. Add extra almond/coconut flour little by little (like 1/2 tsp at a time) if the dough is too sticky.
  6. Preheat the oven to 400 F / 200 C.
  7. Divide the dough into six equal portions.
  8. Roll each portion into a long thin piece.
  9. Wrap the dough around the mold.
  10. Bake for 16 - 18 minutes.
  11. Let cool on a wire rack and remove the molds.
